Description
The Larkspur begins with a thick forged aluminum core that moves heat across the ten-inch diameter without lingering hot spots. An induction-capable steel plate is pressed into the base under high tonnage, keeping the pan true and level on flat glass cooktops where warped metal loses contact. The cooking surface is a mineral-reinforced ceramic nonstick layer applied without PTFE, releasing eggs, fish fillets, and starchy batters with minimal cooking fat.
A hollow cast stainless steel handle is riveted to the vessel wall, staying cool during stovetop work and allowing the pan into ovens up to 450 degrees Fahrenheit. The flared sidewalls encourage evaporation for pan sauces while giving spatulas room to slide underneath delicate foods.
Wash by hand with warm water, mild liquid soap, and a soft sponge. Hard scouring pads and metal utensils will scratch the ceramic matrix over time. While forged aluminum responds quickly to heat adjustments, this pan is not built for hard searing or dry heating, where bare cast iron or stainless steel remains the proper tool.
