One side presents a smooth, unbroken plane for pressing smash burgers, griddling pancakes, and frying eggs. Flipping the slab reveals deep, parallel grill ribs that suspend meats above rendered fat, searing distinct char lines into pork chops, flank steaks, and summer squash.
Perimeter grease troughs along both surfaces route excess fat toward a corner collection reservoir, keeping grease from running onto burner rings or live charcoal embers. Low-profile integral corner handles allow for controlled two-handed lifting, though heavy leather oven mitts are essential once the iron reaches working heat.
Maintaining the surface requires wiping with warm water and a stiff bristle brush, followed immediately by thorough towel drying and a light oil rub over low heat. Soap and dishwashers will strip the seasoning layer and cause surface rust. At nearly ten pounds, this heavy slab requires gradual preheating to avoid uneven hot zones above the burner centers.
