This rectangular baker is slip-cast from dense stoneware and fired at high temperatures to vitrify the clay body. The thick base and sidewalls absorb heat evenly and hold it at the table, keeping braised meats, gratins, and cobblers warm through a long dinner. An impermeable semi-matte glaze seals the interior and exterior surfaces against moisture, staining, and odor retention, while integrated loop handles provide a secure purchase for heavy oven mitts when lifting full weights.
The dish transitions from freezer storage to a preheated oven without thermal shock fractures, provided the oven temperature does not exceed 450 degrees Fahrenheit. It fits standard sheet racks and holds roughly four liquid quarts when filled to the rim. Hand washing with warm soapy water and a soft brush preserves the smooth glaze, though the baker is technically dishwasher-safe.
Because dense stoneware requires time to absorb energy, delicate pastries may bake slower on the bottom than in thin metal pans. This vessel is strictly for conventional ovens and cannot be placed over open flame or an induction burner.
