Description
Engineered for extended boiling, stock extraction, and batch preparation, this eight-quart pot features fully bonded tri-ply construction throughout its entire body. By sandwiching an aluminum heat-conducting core between two sheets of stainless steel, the vessel conducts heat uniformly up its tall sidewalls. This prevents scorch bands along the bottom rim when thickening vegetable purees or reducing dense bone broths over several hours.
Laser-etched quart and liter measurement markings are stamped directly into the interior wall, eliminating the need for measuring cups when filling broth or pasta water. The tight-fitting stainless steel lid rests flush inside an engineered perimeter lip, sealing in moisture and aromatics without rattling or weeping liquid onto the cooktop under a hard rolling boil. Wide, upright loop handles accommodate gloved hands when draining large volumes of boiling water.
Dishwasher safe and resistant to acidic ingredients like stewed tomatoes and wine braises. Because of the substantial metal mass and broad surface area, heating eight quarts of liquid to a boil takes noticeable time on underpowered electric burners.
