Description
End-grain construction arranges individual timber blocks vertically, orienting the open wood fibers toward the surface. When a chef knife strikes down, the sharp bevel slides between the natural vertical grain instead of severing across horizontal wood cells. This mechanic keeps knife edges sharper for noticeably longer, and the resilient maple fibers swell back together under regular oiling to hide shallow knife tracks.
Milled from North American sugar maple, each board is glued with food-safe, water-resistant aliphatic resin under hydraulic pressure. At two inches thick, the substantial slab resists cupping and stays planted firmly on the worktop during heavy prep. Recessed finger mortises along the underside make it possible to lift and reposition the board across prep stations.
Never immerse the board or run it through a dishwasher, which will cause the glue seams to crack and split. Clean with a damp cloth and mild soap, wipe dry immediately, and store upright on edge. Because end-grain absorbs moisture rapidly from both food and air, it requires monthly conditioning with pure mineral oil or beeswax paste to prevent internal tension cracks.
