Description
This set provides eight Kestrel steak knives organized in an oiled ash storage case lined with dark wool felt. Rather than tearing cooked protein with aggressive serrated teeth, these knives feature a plain edge honed to fifteen degrees per side. The clean cut parts roasted beef, game, and poultry without crushing tender grain or squeezing out natural juices.
The blades are cut from German 1.4116 stainless steel, hardened to 56 HRC for a dependable balance between edge retention and ease of sharpening. A continuous full tang runs through the resin-infused composite scales, fastened by three countersunk stainless steel rivets. The spine measures two millimeters at the bolster, providing rigidity without feeling heavy or clumsy.
Wash each blade by hand using warm water and a non-abrasive sponge, wiping dry before storage in the fitted slots. The case protects the edges from contact with other metal cutlery in a drawer. As with any plain-edge table knife, slicing against hard porcelain plates will slowly roll the apex, requiring regular stropping or honing on a fine ceramic rod.
