Description
These heavy-gauge shears are forged from high-carbon 420J2 stainless steel, hardened to hold an edge against poultry cartilage and stiff lobster shells. The two halves join on a machined take-apart pivot pin that uncouples only when the handles are swung open past ninety degrees, allowing each blade to be scrubbed clean at the hinge where grease and food debris typically gather.
The upper cutting edge features fine micro-serrations that grip slick poultry skin, parchment, or butcher twine, preventing the material from slipping forward during a cut. Deep near the pivot sits a rounded bone notch engineered to cradle small chicken or game bones, applying shearing force cleanly without dulling the main straight blade. Ambidextrous loop handles are finished with textured, overmolded polymer for a secure grip with wet hands.
While the shears are corrosion-resistant and easily sever thin poultry ribcages, they are not designed for beef shank bones or heavy garden stems, which will spring the pivot pin. Hand wash thoroughly and dry immediately; harsh heat cycles in automatic dishwashers can loosen the hinge tolerances over time.
