Description
This scraper is built around a heavy-gauge piece of tempered stainless steel that does not flex under downward hand pressure. The blade measures six inches across by three inches tall, ground square with straight, unsharpened 90-degree edges. Along the top edge, a solid turned cylinder of hard sugar maple is slotted and riveted flush through the steel spine. It fills the palm cleanly and keeps wet knuckles clear of the work surface while dividing dough or gathering diced vegetables from the board.
The steel has enough mass to chop cold butter into flour, clear dried flour paste from a butcher block, and lift broad portions of chopped alliums in a single scoop. Laser-etched inch and half-inch increments run along the bottom bevel for portioning uniform rolls or pastry lengths.
Because the handle is solid hardwood, this tool cannot go into the dishwasher or sit submerged in water. Wash the blade with warm water, wipe the maple dry immediately, and oil the timber occasionally with food-safe mineral oil. It is not an offset spatula and will not slide cleanly beneath delicate, sticky pie crusts without tearing.
