Description
The Kestrel 9-inch Bread Knife uses an offset blade geometry to keep your knuckles clear of the cutting board at the bottom of every slice. Stamped from German 1.4116 high-carbon stainless steel and hardened to 56 HRC, the blade balances edge retention with enough structural elasticity to prevent snapping under heavy downward pressure.
Rather than narrow, pointed teeth that rip tender bread apart, the cutting edge features wide, ground scallops. These scallops bite through blistered sourdough crusts cleanly on the pull stroke, moving through dense crumb without compressing it flat. The nine-inch cutting length spans large sourdough boules and sandwich loaves in continuous, level passes without the ragged stepping left by shorter blades. The full-tang polyoxymethylene handle provides a firm, moisture-resistant grip.
Wash by hand in warm water and wipe dry immediately. Never run this knife through an automatic dishwasher, which dulls the scallop points and degrades the handle pins. The serrated profile cannot be serviced on conventional flat sharpening stones and is not intended for slicing meats, carving bone, or cutting hard rinds.
